These are what are called study skins. Usually healthy birds collected from the wild, as a reference point for what existed in certain ecosystems at certain times. In the past the information gleaned from these was usually based on sizes and shapes and colors, but in more recent times, DNA and other samples from even old specimens has enabled us to learn how different birds evolved, or what was in their diet, or other vital information.
